Healthy kale crisps

So...this past year I've had all sorts of minor health problems that have had a lot to do with my diet and lifestyle. This has made me think a lot more about the food and drink I consume. The main thing I have changed is my sugar, dairy and meat intake, at least halving the amount. Also switching to organic when possible and limiting products containing preservatives and nasties.
Crisps used to be my "thing" , I could easily eat a whole share size bag of sensations in one sitting and don't get me started on Pringles, and there I was wondering why the baby weight wasn't going.
I've been meaning to try kale crisps for months and wow they are amazing, super easy To make and healthy...win win!

All I did was wash some curly kale (lidl is currently the cheapest I've found), toss in some olive oil, organic cider vinegar and  pink Virgin salt, pop evenly and thinly over a baking tray, into the oven on about 140 degrees and bake for about 15-20 minutes until the kale shrivels and crisps up.

So there we go, a huge bags worth of salt and vinegar crisps that are super healthy and moreish, guaranteed you'll want to make more!
